RIGHT CHOICE Camps & Catering is recruiting for 2nd Cooks to work in our various locations in Northwestern Alberta. Reporting to the Chef and or 1st cook the successful candidate will assist in preparing meats, salads, sandwiches and entrees as well as be responsible for providing the overall cleanliness of the kitchen and sandwich areas.
Key Responsibilities:
• Assists Chef/1st Cook with hot and cold preparation when assigned
• Prepares sandwiches for bagged lunches
• Cuts vegetables, wraps pastries, and has other snack items readily available
• Cleans, peels, slices, and trims food
• Prepares and serves clients at stream tables
• Meets with Chef or 1st Cook to discuss preparation, production, handling, storage, rotation and serving of all products
• Produce sufficient quantities of a variety of sandwiches as per client and company approved menus
• Responsible for handling an assortment of meat
• Defrost all stock required for upcoming sandwich preparation according to approved HACCP methods and safety procedures
• Ensure that work area is kept clean at all times and assist with the cleaning of general kitchen area
• The ability to produce up to 600 sandwiches in a 11 hour shift
• Follow all company, job and client-specific safety protocols and OH&S legislation.
Qualifications:
• Minimum High School Diploma
• Minimum 2 years of related food/hospitality experience in a remote camp environment is preferred
• Must have valid provincial Food Safe and Standard First Aid with CPR
• Ability to work physically and regularly lift up to 50 lb.
• Ability to work independently and as a part of a team
• Ability to multi-task to meet deadlines
• Excellent communication skills in English both written and verbal
• Ability to interact professionally with customers and co-workers
• Strong focus on safety and quality of work
• Ability to travel and work within Western Alberta on a 21 day on and 7 day off rotation which includes nights, weekends and holidays
